    Call me a redneck but laying in the bed of your truck, on a clear and mild night with a slight breeze, staring at the Milky Way, while enjoying a good beer, the smell of a nearby fire, and some blues on the radio is a damn fine way to spend part of your evening.

    I'm pretty sure I've said it before but I'll say it again, I hate going off Daylight Saving time.

    It's stupid having it get dark this early.

    We should be on Daylight Saving permanently.

    I prefer light in the evening. Whatever gives me that I'm for. Also, stop changing it.

    That said, we're northern folk. I've spent a considerable amount of time in Honduras. In the summer, it's light until 6:30, in the winter it's 5:30. Granted it's better than right now here in the northern hemisphere, but I really do like the 9pm light in June and early July. I REALLY enjoyed the 24/7 light in Alaska.

    This right here! So much easier to get work on the truck and yard done without feeling rushed.

    Don't know that I'd want the 24/7 daylight. I might go all Pacino in Insomnia.

    I think that it wouldn't bother me in the slightest. I can sleep in any light and most sound conditions. Sound can be ok as long as it's not something that starts and stops and is very loud...Jackhammer no good. TV is fine unless it's a show I like.

    I'm getting an urge to fire up the smoker. I've been too busy and it's been way too long since I've smoked anything (I think it was very early Spring for my last smoke).

    Anyone got any suggestions?

    Don't feel like doing any beef brisket. I did that last time.

    I've heard smoked jerky is pretty damn good actually. Come to think of it I think I've still got some ground venison in the freezer. May give me an excuse to pick up a jerky gun...

    Salmon and salami are both good ideas! I've got a cold smoker attachment for the electric smoker. Last Thanksgiving I made some smoked cheeses for the first time (cheddar, mozzarella, Swiss) and they were pretty popular. Might have to do those again and add some salami to the mix.

    I think I'll stop by Costco or Sam's sometime this week and grab a side or 2 of Salmon and give it a try. Any recommendations of wood type? I've got apple chips, hickory chips, and mesquite chips.

    I prefer applewood smoked. Mesquite can be over-powering. It's good but you can't eat enough before you feel like you smoked a pack of cigs.

    Yeah, mesquite is definitely used sparingly from my experience.

    Will give the applewood a try.

    Any rubs you recommend on salmon?
